Ingredients

- 1 cup lentils
- 4 cups vegetable broth
- 2 cups fresh spinach
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion, carrots, and celery; sauté until softened.
- Add garlic; cook for 1 minute.
- Add lentils, broth, cumin, salt, and pepper; bring to a boil.
- Reduce heat; simmer for 25 minutes.
- Add spinach; cook until wilted.
- Serve hot.
