Ingredients

- 1 lb Italian sausage
- 4 slices bacon, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 3 cups water
- 3 large potatoes, cubed
- 1 bunch kale, chopped
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Brown sausage in a large pot over medium heat. Drain excess fat and set aside.
- Cook bacon in the same pot until crispy. Add onion and garlic, sauté until softened.
- Pour in chicken broth and water. Bring to a boil.
- Add potatoes and simmer until tender, about 15 minutes.
- Stir in kale and cooked sausage. Simmer for 5 minutes.
- Reduce heat to low and add heavy cream. Season with salt and pepper.
- Serve hot.
Notes
- Use spicy sausage for extra heat.
- Substitute kale with spinach if preferred.
- Store leftovers in the fridge for up to 3 days.
