Ingredients
Scale
- 2 medium zucchini
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1 cup cherry tomatoes, halved
- 1/4 cup grated Parmesan cheese
- Salt to taste
- Pepper to taste
Instructions
- Spiralize the zucchini into noodles.
- Heat olive oil in a pan over medium heat.
- Add garlic and sauté until fragrant.
- Add cherry tomatoes and cook until softened.
- Add zucchini noodles and toss for 2-3 minutes.
- Season with salt and pepper.
- Remove from heat and stir in Parmesan cheese.
- Serve immediately.
Notes
- Adjust cooking time for desired noodle texture.
- Use a spiralizer for best results.
- Can substitute Parmesan with nutritional yeast for a vegan option.
