Ingredients

  • 2 medium zucchinis, spiralized
  • 1 cup fresh basil leaves
  • 2 cloves garlic
  • 1/4 cup pine nuts
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Spiralize the zucchinis to create noodles.
  2. In a food processor, combine basil, garlic, pine nuts, and Parmesan. Pulse until finely chopped.
  3. With the processor running, slowly add olive oil until the pesto is smooth.
  4. Season the pesto with salt and pepper to taste.
