Description
A light and fresh dish featuring zucchini noodles tossed in pesto with cherry tomatoes and grilled shrimp.
Ingredients

- 2 medium zucchinis, spiralized
- 1 cup cherry tomatoes, halved
- 12 large shrimp, peeled and deveined
- 1/4 cup basil pesto
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp lemon juice
Instructions
- Heat olive oil in a pan over medium heat.
- Add shrimp and cook for 2-3 minutes per side until pink and opaque.
- Remove shrimp from pan and set aside.
- In the same pan, add zucchini noodles and cook for 2 minutes until slightly softened.
- Add cherry tomatoes and cook for 1 minute.
- Stir in pesto, salt, pepper, and lemon juice.
- Toss everything together until well coated.
- Serve topped with grilled shrimp.

- Use fresh or store-bought pesto.
- Adjust salt and pepper to taste.
- For extra flavor, add grated Parmesan cheese.
