Description

A light and fresh dish featuring zucchini noodles tossed in pesto with cherry tomatoes and grilled shrimp.


Ingredients

Scale
  • 2 medium zucchinis, spiralized
  • 1 cup cherry tomatoes, halved
  • 12 large shrimp, peeled and deveined
  • 1/4 cup basil pesto
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp lemon juice

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add shrimp and cook for 2-3 minutes per side until pink and opaque.
  3. Remove shrimp from pan and set aside.
  4. In the same pan, add zucchini noodles and cook for 2 minutes until slightly softened.
  5. Add cherry tomatoes and cook for 1 minute.
  6. Stir in pesto, salt, pepper, and lemon juice.
  7. Toss everything together until well coated.
  8. Serve topped with grilled shrimp.

Notes

  • Use fresh or store-bought pesto.
  • Adjust salt and pepper to taste.
