Crispy and delicious zucchini fritters made in the air fryer for a healthier twist on a classic favorite!
Ingredients

- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 large egg, beaten
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Cooking spray
Instructions
- Grate the zucchinis and place them in a clean kitchen towel. Squeeze out excess moisture and place in a large bowl.
- Add salt to the grated zucchini, mix well, and let sit for 10 minutes.
- After 10 minutes, squeeze out more moisture if needed. Add flour, Parmesan cheese, beaten egg, black pepper, garlic powder, and onion powder to the bowl. Mix until well combined.
- Preheat the air fryer to 375°F (190°C).
- Form the zucchini mixture into small patties, about 2 inches in diameter.
- Lightly spray the air fryer basket with cooking spray. Arrange the fritters in a single layer, making sure not to overcrowd the basket.
- Spray the tops of the fritters with cooking spray.
- Cook in the air fryer for 10-12 minutes, flipping halfway through, until golden brown and crispy.
- Remove from the air fryer and let cool slightly before serving.
Notes
- Serve with a dipping sauce of your choice, such as tzatziki or sour cream.
- Feel free to add herbs like dill or parsley for added flavor.
- These fritters can be stored in an airtight container in the refrigerator for up to 3 days.
