Ingredients

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/4 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg, beaten
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Cooking spray

Instructions

  1. Grate the zucchinis and place them in a clean kitchen towel. Squeeze out excess moisture and place in a large bowl.
  2. Add salt to the grated zucchini, mix well, and let sit for 10 minutes.
  3. After 10 minutes, squeeze out more moisture if needed. Add flour, Parmesan cheese, beaten egg, black pepper, garlic powder, and onion powder to the bowl. Mix until well combined.
  4. Preheat the air fryer to 375°F (190°C).
  5. Form the zucchini mixture into small patties, about 2 inches in diameter.
  6. Lightly spray the air fryer basket with cooking spray. Arrange the fritters in a single layer, making sure not to overcrowd the basket.
  7. Spray the tops of the fritters with cooking spray.
  8. Cook in the air fryer for 10-12 minutes, flipping halfway through, until golden brown and crispy.
  9. Remove from the air fryer and let cool slightly before serving.

  • Serve with a dipping sauce of your choice, such as tzatziki or sour cream.
