These delicious zucchini brownies are rich, fudgy, and surprisingly healthy! A perfect way to use up extra zucchini while satisfying your sweet tooth.

- 1 cup grated zucchini (about 1 medium zucchini)
- 1/2 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/2 cup vegetable oil or melted coconut oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan or line it with parchment paper.
- In a large bowl, mix together the grated zucchini, cocoa powder, flour, baking powder, baking soda, and salt until combined.
- In another bowl, whisk together the granulated sugar, brown sugar, oil, eggs, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Fold in the chocolate chips if using.
- Spread the batter evenly into the prepared baking pan.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
- Cut into squares and enjoy!
Notes
- Make sure to squeeze out excess moisture from the grated zucchini for the best texture.
- You can substitute half of the all-purpose flour with whole wheat flour for a healthier option.
- These brownies can be stored in an airtight container at room temperature for up to 3 days.
