- 8 oz (225g) spaghetti or your favorite pasta
- 2 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1/4 cup fresh lemon juice
- Zest of 1 lemon
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side, or until cooked through and no longer pink in the center. Remove the chicken from the skillet and let it rest for a few minutes before slicing.
- In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.
- Pour in the chicken broth, lemon juice, lemon zest, oregano, and red pepper flakes (if using). Bring the mixture to a simmer and let it reduce for about 3-4 minutes.
- Add the cooked pasta to the skillet and toss to coat in the sauce. Stir in the sliced chicken and Parmesan cheese until everything is well combined.
- Remove from heat, garnish with fresh parsley, and serve immediately.
