Description
A hearty and warming winter stew perfect for cold days.
Ingredients
Scale
- 2 lbs beef chuck, cut into cubes
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine
- 2 tbsp tomato paste
- 2 tsp dried thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Heat a large pot over medium heat.
- Add beef and brown on all sides.
- Remove beef and set aside.
- Add onion and garlic, sauté until soft.
- Add carrots and potatoes, stir for 2 minutes.
- Return beef to the pot.
- Pour in beef broth and red wine.
- Add tomato paste, thyme, bay leaves, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
- Remove bay leaves before serving.
Notes
- Store leftovers in the fridge for up to 3 days.
- Freeze for longer storage.
- Serve with crusty bread.
