Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine
  • 2 tbsp tomato paste
  • 2 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat.
  2. Add beef and brown on all sides.
  3. Remove beef and set aside.
  4. Add onion and garlic, sauté until soft.
  5. Add carrots and potatoes, stir for 2 minutes.
  6. Return beef to the pot.
  7. Pour in beef broth and red wine.
  8. Add tomato paste, thyme, bay leaves, salt, and pepper.
  9. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
  10. Remove bay leaves before serving.

Notes

  • Store leftovers in the fridge for up to 3 days.
  • Freeze for longer storage.
