A hearty winter stew that brings warmth and comfort during cold months.
Ingredients

- 2 lbs beef chuck, cubed
- 4 cups beef broth
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 1 cup onions, chopped
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef and brown on all sides.
- Stir in onions and garlic, cooking until softened.
- Add tomato paste and cook for 2 minutes.
- Pour in beef broth and bring to a boil.
- Add carrots, potatoes, thyme, rosemary, salt, and pepper.
- Reduce heat and simmer for 1.5 to 2 hours, until beef is tender.
- Adjust seasoning as needed and serve hot.
Notes
- Serve with crusty bread for dipping.
- Can be stored in the refrigerator for up to 3 days.
- Freezes well for future meals.
