- 1 bay leaf
- Salt and pepper to taste
- 2 cups chopped vegetables (e.g., potatoes, green beans)
- 1 cup cooked beans (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery, and cook until softened.
- Stir in garlic and cook for 1 minute.
- Add broth, diced tomatoes, thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add chopped vegetables and beans, if using, and cook for an additional 15 minutes.
- Remove bay leaf before serving.
