A warm and hearty winter soup that brings comfort on cold days.
Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 6 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) white beans, drained and rinsed
- 2 cups kale, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Stir in garlic, thyme, and rosemary. Cook for 1 minute.
- Add vegetable broth, diced tomatoes, and white beans. Bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Add kale and cook for another 5 minutes.
- Season with salt and pepper before serving.
Notes
- Feel free to add your favorite vegetables.
- Can be stored in the refrigerator for up to 5 days.
- Freezes well for later use.
