A hearty winter soup that warms you up.
Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 6 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup green beans, chopped
- 1 cup potatoes, diced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup kale, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Stir in garlic and cook for 1 minute.
- Add vegetable broth and diced tomatoes. Bring to a boil.
- Stir in green beans, potatoes, thyme, salt, and pepper.
- Reduce heat and simmer for 20 minutes.
- Add kale and cook for an additional 5 minutes.
- Serve hot and enjoy.

- Feel free to add your favorite vegetables.
