- 2 cups mixed wild mushrooms (shiitake, oyster, chanterelles)
- 1 cup grated Gruyere cheese
- 3 large eggs
- 1 cup heavy cream

Instructions
- Preheat the oven to 375°F (190°C).
- Sauté the mixed wild mushrooms in a pan until they are tender and any excess moisture has evaporated.
- In a mixing bowl, whisk together the eggs and heavy cream until well combined.
- Add the sautéed mushrooms to the egg and cream mixture.
- Stir in the grated Gruyere cheese, and season with salt and pepper to taste.
- Pour the filling into the prepared pie crust.
