- 3 ripe bananas
- 1 cup whole wheat flour
- 1/2 cup honey or maple syrup
- 1/4 cup vegetable oil
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon (optional)
- 1/2 cup nuts or chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mash the ripe bananas until smooth.
- Add honey or maple syrup and vegetable oil to the mashed bananas and mix well.
- Stir in the vanilla extract.
- In a separate bowl, combine the whole wheat flour, baking soda, salt, and cinnamon if using.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- If desired, fold in nuts or chocolate chips.
- Spoon the batter into a greased muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
