  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 lemon, halved
  • 4 garlic cloves, smashed
  • 1 onion, quartered

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels and place it in a roasting pan.
  3. Rub the olive oil all over the chicken, then season with salt and black pepper.
  4. Stuff the cavity with the halved lemon, smashed garlic, onion, and fresh herbs.
  5. Tie the legs together with kitchen twine and tuck the wing tips under the chicken.
  6. Roast in the preheated oven for 1 hour 15 minutes, or until the internal temperature reaches 165°F (74°C).
