- 1 whole chicken (about 4–5 lbs)
- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 lemon, halved
- 4 garlic cloves, smashed
- 1 onion, quartered
Instructions
- Preheat the oven to 425°F (220°C).
- Pat the chicken dry with paper towels and place it in a roasting pan.
- Rub the olive oil all over the chicken, then season with salt and black pepper.
- Stuff the cavity with the halved lemon, smashed garlic, onion, and fresh herbs.
- Tie the legs together with kitchen twine and tuck the wing tips under the chicken.
- Roast in the preheated oven for 1 hour 15 minutes, or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 10-15 minutes before carving.
