- 200g cream cheese, softened
- 100g white chocolate, melted
- 50g powdered sugar
- 100g raspberry jam
- 150g digestive biscuits, crushed
- 50g butter, melted
- 100g white chocolate, for coating
Instructions
- Mix crushed biscuits with melted butter and press into a lined tray. Chill for 15 minutes.
- Beat cream cheese, powdered sugar, and melted white chocolate until smooth.
- Spread the cream cheese mixture over the biscuit base.
- Drop spoonfuls of raspberry jam onto the cream cheese layer.
- Freeze for 2 hours, then cut into small squares.
- Melt the remaining white chocolate and dip each square to coat.
- Chill until set. Serve cold.

- Keep chilled until ready to serve.
- For a smoother texture, sieve the powdered sugar.
