- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup white chocolate chips, melted
- 1 cup powdered sugar
- 1/2 cup sour cream
- 1/4 cup strong brewed coffee, cooled
- 1 teaspoon vanilla extract
- 3 large eggs
- Whipped cream for topping

Instructions
- Preheat your oven to 325°F (163°C).
- In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add the melted white chocolate and mix until well combined.
- Add powdered sugar, sour cream, brewed coffee, and vanilla extract to the cream cheese mixture. Mix until smooth.
- Add the eggs one at a time, mixing well after each addition. Be careful not to overmix.
- Pour the cheesecake batter over the prepared crust in the springform pan.
- Bake in the preheated oven for 55-60 minutes, or until the center is set and only slightly jiggly.
- Turn off the oven and leave the cheesecake in the oven with the door ajar for 1 hour to cool gradually.
- Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight.
- Before serving, top with whipped cream and chocolate shavings.
