Ingredients

  • 2 cups cooked shredded chicken
  • 8 flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup sour cream
  • 1 (4 oz) can diced green chilies
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix shredded chicken with 1 cup of shredded cheese.
  3. Spoon the chicken mixture into each tortilla and roll them up.
  4. Place the rolled tortillas seam-side down in a baking dish.
  5. In a saucepan, melt butter over medium heat.
  6. Whisk in flour and cook for 1 minute.
  7. Gradually add chicken broth, stirring constantly until the sauce thickens.
  8. Remove from heat and stir in sour cream, green chilies, salt, and pepper.
  9. Pour the sauce over the enchiladas.
  10. Sprinkle the remaining cheese on top.
  11. Bake for 20-25 minutes until bubbly and golden.
