- 2 cups cooked shredded chicken
- 8 flour tortillas
- 2 cups shredded Monterey Jack cheese
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 cup sour cream
- 1 (4 oz) can diced green chilies
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 350°F (175°C).
- Mix shredded chicken with 1 cup of shredded cheese.
- Spoon the chicken mixture into each tortilla and roll them up.
- Place the rolled tortillas seam-side down in a baking dish.
- In a saucepan, melt butter over medium heat.
- Whisk in flour and cook for 1 minute.
- Gradually add chicken broth, stirring constantly until the sauce thickens.
- Remove from heat and stir in sour cream, green chilies, salt, and pepper.
- Pour the sauce over the enchiladas.
- Sprinkle the remaining cheese on top.
- Bake for 20-25 minutes until bubbly and golden.
Notes
- Use rotisserie chicken for a quicker option.
- Adjust the amount of green chilies to your taste.
- Let the enchiladas rest for 5 minutes before serving.
