Description
A hearty and flavorful white chicken chili made in a crockpot.
Ingredients

- 2 pounds boneless, skinless chicken breasts
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 can (4 oz) diced green chiles
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup sour cream
- 1 cup shredded cheese
Instructions
- Place chicken breasts at the bottom of the crockpot.
- Add beans, corn, onion, garlic, green chiles, chicken broth, cumin, chili powder, salt, and pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Remove chicken and shred it with two forks.
- Return shredded chicken to the crockpot.
- Stir in sour cream and cheese until melted.
- Serve hot.
Notes
- Adjust spices according to your taste.
- Serve with tortilla chips or bread.
- Leftovers can be stored in the refrigerator for up to 3 days.
