Description

A hearty and flavorful white chicken chili made in a crockpot.


Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can (4 oz) diced green chiles
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup sour cream
  • 1 cup shredded cheese

Instructions

  1. Place chicken breasts at the bottom of the crockpot.
  2. Add beans, corn, onion, garlic, green chiles, chicken broth, cumin, chili powder, salt, and pepper.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Remove chicken and shred it with two forks.
  6. Return shredded chicken to the crockpot.
  7. Stir in sour cream and cheese until melted.
  8. Serve hot.
