- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 pound chicken breast, cooked and shredded
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 2 cups chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup heavy cream
- 1/2 cup sour cream
- Chopped cilantro and lime wedges for serving
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until it becomes translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the shredded chicken, white beans, diced green chilies, chicken broth, cumin, chili powder, paprika, salt, and black pepper. Bring to a simmer.
- Reduce the heat and let it cook for about 20 minutes, allowing the flavors to meld together.
- Stir in the heavy cream and sour cream until fully combined. Cook for an additional 5 minutes, stirring occasionally.
- Serve hot, garnished with chopped cilantro and lime wedges.
Notes
- For a spicier chili, add more diced green chilies or a pinch of cayenne pepper.
