- 4 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 tablespoons olive oil
- 8 ounces mushrooms, sliced
- 1/2 cup Marsala wine
- 1/2 cup chicken broth
- 2 tablespoons butter
- 2 tablespoons fresh parsley, chopped
Instructions
- Pound chicken breasts to an even thickness.
- Mix flour, salt, and pepper in a shallow dish.
- Dredge chicken in flour mixture.
- Heat olive oil in a skillet over medium heat.
- Cook chicken until golden brown, about 5 minutes per side.
- Remove chicken and set aside.
- Add mushrooms to the skillet and cook until softened.
- Pour in Marsala wine and chicken broth.
- Simmer until sauce reduces by half.
- Stir in butter until melted.
- Return chicken to skillet and coat with sauce.
- Sprinkle with parsley before serving.
Notes
- Use dry Marsala wine for best flavor.
- Serve over pasta or mashed potatoes.
- Leftovers keep refrigerated for 3 days.
