Ingredients

- 2 cups of chopped vegetables (bell peppers, zucchini, carrots)
- 1 cup of canned chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a large bowl, combine the chopped vegetables and chickpeas.
- Drizzle with olive oil, garlic powder, paprika, salt, and pepper. Toss to coat evenly.
- Place the mixture in the air fryer basket in a single layer.
- Cook for 12-15 minutes, shaking the basket halfway through cooking for even crispiness.
- Once cooked, remove from the air fryer and garnish with fresh herbs if desired.
Notes
- Feel free to use any combination of your favorite vegetables.
- For a spicy kick, add red pepper flakes or cayenne pepper.
- Serve with a dipping sauce or over a bed of greens for a complete meal.
