Ingredients

- 2 celery stalks, sliced

- 1 zucchini, diced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes, with juice
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 cups fresh spinach or kale, chopped
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onions, carrots, and celery; sauté for 5-7 minutes until softened.
- Stir in garlic and cook for another minute until fragrant.
- Add zucchini, bell pepper, diced tomatoes, vegetable broth, thyme, and basil.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes.
- Season with salt and pepper to taste.
- Stir in spinach or kale and cook for an additional 5 minutes until wilted.
- Serve hot, garnished with fresh herbs if desired.
