Ingredients

  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes, with juice
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups fresh spinach or kale, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions, carrots, and celery; sauté for 5-7 minutes until softened.
  3. Stir in garlic and cook for another minute until fragrant.
  4. Add zucchini, bell pepper, diced tomatoes, vegetable broth, thyme, and basil.
