Ingredients

- 2 cups of mixed vegetables (carrots, broccoli, bell peppers)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon lemon juice
Instructions
- Wash and chop the vegetables into bite-sized pieces.
- In a large skillet, heat olive oil over medium heat.
- Add the vegetables to the skillet and sauté for 5-7 minutes.
- Season with salt and black pepper.
- Drizzle with lemon juice and toss to coat.
- Cook for another 2-3 minutes until tender.
