- 1 lb (450g) firm white fish (like cod or tilapia), cut into chunks
- 1 can (14 oz) coconut milk
- 1 cup vegetable broth
- 2 medium carrots, sliced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 teaspoon turmeric
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, and ginger, and sauté until the onion is translucent, about 5 minutes.
- Add the sliced carrots, bell pepper, zucchini, and green beans to the pot. Stir and cook for another 5 minutes.
- Pour in the vegetable broth and coconut milk, and bring the mixture to a simmer.
- Stir in the soy sauce, turmeric, paprika, salt, and pepper. Let the stew simmer for about 10 minutes, allowing the vegetables to soften.
- Add the fish chunks to the pot, gently stirring to coat them in the broth. Cook for an additional 5-7 minutes, or until the fish is cooked through and flakes easily with a fork.
- Remove from heat and garnish with fresh cilantro. Serve hot with lime wedges on the side.
