- 1 cup quinoa
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a skillet, heat olive oil over medium heat.
- Add onion and garlic; sauté until translucent.
- Add bell pepper and zucchini; cook until tender.
- Add cherry tomatoes and oregano; season with salt and pepper.
- Fluff quinoa with a fork and mix with vegetable mixture.
- Serve warm, garnished with fresh basil.
