Ingredients

  • 1 bell pepper, diced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. In a skillet, heat olive oil over medium heat.
  5. Add onion and garlic; sauté until translucent.
  6. Add bell pepper and zucchini; cook until tender.
  7. Add cherry tomatoes and oregano; season with salt and pepper.
  8. Fluff quinoa with a fork and mix with vegetable mixture.
  9. Serve warm, garnished with fresh basil.
