A simple and delicious vegan banana bread recipe.

- 3 ripe bananas, mashed
- 1/4 cup coconut oil, melted
- 1/2 cup brown sugar
- 1/4 cup almond milk
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix mashed bananas and melted coconut oil.
- Add brown sugar, almond milk, and vanilla extract. Stir well.
- In another bowl, combine flour, baking soda, and salt.
- Gradually add dry ingredients to the wet mixture. Stir until just combined.
- Pour the batter into a greased loaf pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Let it cool before slicing.
Notes
- Store leftovers in an airtight container.
- Can add nuts or chocolate chips for extra flavor.
- Use overripe bananas for best results.
