- 1 cup chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt to taste
- 1 zucchini, sliced
- 1 bell pepper, chopped
- 1 teaspoon Italian seasoning
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a bowl, mix chickpeas with olive oil, garlic powder, paprika, and salt.
- Add chickpeas to the air fryer basket and cook for 10 minutes.
- While chickpeas cook, toss zucchini and bell pepper with olive oil and Italian seasoning.
- Add vegetables to the air fryer for the last 8 minutes of cooking.
- Shake the basket halfway through cooking for even crispiness.
- Serve warm as a snack or side dish.
