Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup whole milk
  • 2 tsp vanilla extract
  • 1 tbsp lemon zest
  • 1 cup powdered sugar (for glaze)
  • 2 tbsp fresh lemon juice (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Cream butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each.
  4. In a separate bowl, whisk flour, baking powder, and salt.
  5. Alternately add dry ingredients and milk to the butter mixture, mixing until combined.
  6. Stir in vanilla extract and lemon zest.
  7. Pour batter into the prepared pan and bake for 50-60 minutes, or until a toothpick comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack.
  9. Whisk powdered sugar and lemon juice for the glaze. Drizzle over the cooled cake.
