- 1 9-inch pre-baked pie crust
- 2 cups whole milk
- 1/2 cup granulated sugar
- 3 large egg yolks
- 1/4 cup cornstarch
- 1 tsp vanilla extract
- 1 cup mixed fresh berries (strawberries, blueberries, raspberries)
- 1 tbsp powdered sugar (optional)
Instructions
- Preheat oven to 350°F (175°C).
- Bake the pie crust for 10-12 minutes until golden. Let it cool.
- In a saucepan, heat milk over medium heat until simmering.
- Whisk sugar, egg yolks, and cornstarch in a bowl.
- Slowly pour hot milk into the egg mixture while whisking.
- Return mixture to the saucepan and cook until thickened.
- Remove from heat, stir in vanilla extract.
- Pour custard into the pie crust and chill for 2 hours.
- Top with fresh berries before serving.
- Sprinkle with powdered sugar if desired.
