- 2 cups heavy cream
- 1 cup whole milk
- 1/2 cup granulated sugar
- 1 tablespoon vanilla bean paste
- 2 1/2 teaspoons gelatin powder
- 3 tablespoons cold water
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 2 tablespoons powdered sugar
- 1 tablespoon lemon juice
Instructions
- In a saucepan, combine heavy cream, whole milk, granulated sugar, and vanilla bean paste. Heat over medium heat until the sugar dissolves and the mixture is warm, but not boiling.
- In a small bowl, sprinkle gelatin over cold water and let sit for 5 minutes to bloom.
- Once the cream mixture is warm, remove it from heat and stir in the bloomed gelatin until fully dissolved.
- Pour the mixture into ramekins or dessert glasses and refrigerate for at least 4 hours, or until set.
- To make the berry coulis, place mixed berries, powdered sugar, and lemon juice in a blender. Blend until smooth, then strain through a fine mesh sieve to remove seeds if desired.
- To serve, run a knife around the edge of the panna cotta and invert onto a plate. Drizzle with berry coulis and enjoy!
