Ingredients

  • 8 oz (225 g) pasta of your choice
  • 1 lb (450 g) boneless, skinless chicken breasts, diced
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup (240 ml) heavy cream
  • 1 cup (100 g) grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente. During the last 2 minutes of cooking, add the broccoli florets to the pasta water. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced chicken, season with salt and pepper, and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a simmer.
  4. Stir in the grated Parmesan cheese until melted and smooth. Season with additional salt and pepper if needed.
  5. Add the cooked chicken and pasta with broccoli back into the skillet. Toss everything together until well coated in the creamy sauce.
  6. Serve hot, garnished with chopped parsley.

Notes

  • Feel free to add more vegetables like bell peppers or spinach if desired.
  • For a lighter version, you can substitute half-and-half for the heavy cream.
