- 8 oz (225 g) pasta of your choice
- 1 lb (450 g) boneless, skinless chicken breasts, diced
- 2 cups broccoli florets
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup (240 ml) heavy cream
- 1 cup (100 g) grated Parmesan cheese
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Cook the pasta according to package instructions until al dente. During the last 2 minutes of cooking, add the broccoli florets to the pasta water. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced chicken, season with salt and pepper, and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a simmer.
- Stir in the grated Parmesan cheese until melted and smooth. Season with additional salt and pepper if needed.
- Add the cooked chicken and pasta with broccoli back into the skillet. Toss everything together until well coated in the creamy sauce.
- Serve hot, garnished with chopped parsley.
Notes
- Feel free to add more vegetables like bell peppers or spinach if desired.
- For a lighter version, you can substitute half-and-half for the heavy cream.
