Instructions

  1. Step 1: Preheat your oven to 300°F (150°C). Season the chuck roast generously with salt and pepper.
  2. Step 2: In a large Dutch oven, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side.
  3. Step 3: Remove the roast and set aside. In the same pot, add onions and garlic, sautéing until fragrant. Add the beef broth and scrape up any browned bits from the bottom.
  4. Step 4: Return the roast to the pot, add carrots, potatoes, rosemary, and thyme. Cover and place in the oven.
