- 3 lbs chuck roast
- 2 cups carrots, chopped
- 2 cups potatoes, chopped
- 1 onion, quartered
- 4 cloves garlic, minced
- 2 cups beef broth
- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
Instructions
- Step 1: Preheat your oven to 300°F (150°C). Season the chuck roast generously with salt and pepper.
- Step 2: In a large Dutch oven, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side.
- Step 3: Remove the roast and set aside. In the same pot, add onions and garlic, sautéing until fragrant. Add the beef broth and scrape up any browned bits from the bottom.
- Step 4: Return the roast to the pot, add carrots, potatoes, rosemary, and thyme. Cover and place in the oven.
- Step 5: Cook for 4 hours or until the meat is tender and easily pulls apart with a fork. Let it rest for 15 minutes before serving.
