Description

A hearty and flavorful beef soup made with tender beef chunks, vegetables, and aromatic spices.


Ingredients

  • 500g beef chunks
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 potatoes, cubed
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 1 tbsp tomato paste
  • 6 cups beef broth
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the beef chunks and brown on all sides, then remove and set aside.
  3. In the same pot, sauté onions, carrots, and celery until softened.
  4. Add garlic and tomato paste, cook for 1 minute.
  5. Return the beef to the pot and pour in the beef broth.
  6. Add thyme, bay leaf, salt, and pepper.
  7. Bring to a boil, then reduce heat and simmer for 1 hour.
  8. Add potatoes and simmer for another 30 minutes until beef and vegetables are tender.
  9. Adjust seasoning and serve hot.

Notes

  • For a richer flavor, sear the beef in batches.
  • You can substitute or add other vegetables like peas or green beans.
  • Store leftovers in the fridge for up to 3 days.
