A hearty and flavorful beef soup made with tender beef chunks, vegetables, and aromatic spices.
Ingredients

- 500g beef chunks
- 1 onion, chopped
- 2 carrots, diced
- 2 potatoes, cubed
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 1 tbsp tomato paste
- 6 cups beef broth
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the beef chunks and brown on all sides, then remove and set aside.
- In the same pot, sauté onions, carrots, and celery until softened.
- Add garlic and tomato paste, cook for 1 minute.
- Return the beef to the pot and pour in the beef broth.
- Add thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Add potatoes and simmer for another 30 minutes until beef and vegetables are tender.
- Adjust seasoning and serve hot.
Notes
- For a richer flavor, sear the beef in batches.
- You can substitute or add other vegetables like peas or green beans.
- Store leftovers in the fridge for up to 3 days.
