Description

Twice baked potatoes are a delicious and hearty dish. They are baked, scooped, mixed with ingredients, and then returned to their skins for a second bake.

Ingredients

Scale
  • 4 large russet potatoes
  • 1 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1/4 cup unsalted butter
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 green onions, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pierce potatoes with a fork and bake for about 45 minutes or until tender.
  3. Let the potatoes cool slightly, then cut them in half lengthwise.
  4. Scoop out the insides into a bowl, leaving a little potato in the skin.
  5. Add sour cream, cheddar cheese, milk, butter, garlic powder, salt, and pepper to the bowl.
  6. Mash until smooth and mixed well.
  7. Stir in chopped green onions.
  8. Fill the potato skins with the mixture.
  9. Bake again for 20 minutes until golden and heated through.
