Twice baked potatoes are a delicious and hearty dish. They are baked, scooped, mixed with ingredients, and then returned to their skins for a second bake.

- 4 large russet potatoes
- 1 cup sour cream
- 1/2 cup shredded cheddar cheese
- 1/4 cup milk
- 1/4 cup unsalted butter
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 2 green onions, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Pierce potatoes with a fork and bake for about 45 minutes or until tender.
- Let the potatoes cool slightly, then cut them in half lengthwise.
- Scoop out the insides into a bowl, leaving a little potato in the skin.
- Add sour cream, cheddar cheese, milk, butter, garlic powder, salt, and pepper to the bowl.
- Mash until smooth and mixed well.
- Stir in chopped green onions.
- Fill the potato skins with the mixture.
- Bake again for 20 minutes until golden and heated through.
Notes
- For a healthier option, use Greek yogurt instead of sour cream.
- You can add bacon bits for extra flavor.
- Store leftovers in the refrigerator for up to 3 days.
