Description

Twice baked potatoes are a delicious side dish made from baked potatoes that are scooped out, mixed with cheese and other ingredients, and then baked again.


Ingredients

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1/4 cup chopped green onions
  • 4 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes and prick them with a fork.
  3. Bake the potatoes for about 45 minutes or until tender.
  4. Let the potatoes cool slightly, then cut them in half lengthwise.
  5. Scoop out the insides into a bowl, leaving a thin layer of potato in the skins.
  6. Add butter, sour cream, milk, cheese, green onions, salt, and pepper to the bowl. Mix until smooth.
  7. Fill the potato skins with the mixture.
  8. Top with remaining cheese.
  9. Bake for an additional 15-20 minutes until golden and heated through.

Notes
