Description
Twice baked potatoes are a delicious side dish made from baked potatoes that are scooped out, mixed with cheese and other ingredients, and then baked again.
Ingredients

- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup milk
- 1/4 cup chopped green onions
- 4 tablespoons butter
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the potatoes and prick them with a fork.
- Bake the potatoes for about 45 minutes or until tender.
- Let the potatoes cool slightly, then cut them in half lengthwise.
- Scoop out the insides into a bowl, leaving a thin layer of potato in the skins.
- Add butter, sour cream, milk, cheese, green onions, salt, and pepper to the bowl. Mix until smooth.
- Fill the potato skins with the mixture.
- Top with remaining cheese.
- Bake for an additional 15-20 minutes until golden and heated through.
Notes
- You can add bacon bits for extra flavor.
- These can be made ahead and reheated.
- Experiment with different cheeses for variety.
