Description
A hearty traditional French beef stew with mushrooms, perfect for cold days.
Ingredients

- 1.5 lbs beef chuck, cut into cubes
- 2 cups mushrooms, sliced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 cups beef broth
- 1 cup red wine
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Brown the beef cubes on all sides, then remove and set aside.
- Add onions and garlic to the pot, sauté until softened.
- Stir in mushrooms and carrots, cook for 5 minutes.
- Return beef to the pot, add broth, wine, tomato paste, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 2 hours.
- Season with salt and pepper before serving.
Notes
- For richer flavor, marinate beef in wine overnight.
- Serve with crusty bread or mashed potatoes.
- Store leftovers in the fridge for up to 3 days.
