Ingredients

  • 1.5 lbs beef chuck, cut into cubes
  • 2 cups mushrooms, sliced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Brown the beef cubes on all sides, then remove and set aside.
  3. Add onions and garlic to the pot, sauté until softened.
  4. Stir in mushrooms and carrots, cook for 5 minutes.
  5. Return beef to the pot, add broth, wine, tomato paste, thyme, and bay leaf.
  6. Bring to a boil, then reduce heat and simmer for 2 hours.
  7. Season with salt and pepper before serving.
