Ingredients

  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup cucumber, diced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup grated Parmesan cheese
  • 1/3 cup Italian dressing
  • Salt and pepper to taste

Instructions

  1. Cook tortellini according to package instructions. Drain and rinse with cold water.
  2. In a large bowl, combine cooked tortellini, cherry tomatoes, black olives, red onion, and cucumber.
  3. Add Italian dressing and toss gently to coat.
  4. Stir in fresh basil and Parmesan cheese.
