Ingredients

- 1 package (20 oz) cheese tortellini
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1/2 cup red onion, finely chopped
- 1/2 cup cucumber, diced
- 1/4 cup fresh basil, chopped
- 1/4 cup grated Parmesan cheese
- 1/3 cup Italian dressing
- Salt and pepper to taste
Instructions
- Cook tortellini according to package instructions. Drain and rinse with cold water.
- In a large bowl, combine cooked tortellini, cherry tomatoes, black olives, red onion, and cucumber.
- Add Italian dressing and toss gently to coat.
- Stir in fresh basil and Parmesan cheese.
- Season with salt and pepper to taste.
- Chill for at least 30 minutes before serving.
Notes
- Add grilled chicken or shrimp for extra protein.
- Substitute with gluten-free tortellini if needed.
- Store leftovers in the fridge for up to 3 days.
