- 2 cans (14.5 ounces each) diced tomatoes, undrained
- 2 cups vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup heavy cream
- Fresh basil leaves for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the diced tomatoes (with their juices), vegetable broth, dried basil, dried oregano, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
- Using an immersion blender, blend the soup until smooth. (Alternatively, you can carefully transfer the soup to a blender in batches.)
- Stir in the heavy cream and heat through. Adjust seasoning to taste.
- Serve hot, garnished with fresh basil leaves if desired.
