Ingredients

  • 8 oz pasta (linguine or spaghetti)
  • 1 lb shrimp, peeled and deveined
  • 2 cups fresh basil leaves
  • 3 cloves garlic
  • 1/4 cup olive oil
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup pine nuts
  • 1 tbsp lime juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup cherry tomatoes, halved
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a food processor, blend basil, garlic, olive oil, Parmesan, pine nuts, lime juice, salt, and pepper until smooth to make the pesto.
  3. In a skillet, sauté shrimp over medium heat for 2-3 minutes per side until pink.
  4. Add cherry tomatoes and red pepper flakes (if using) to the shrimp, cook for 1 minute.
  5. Toss the cooked pasta with the pesto sauce and shrimp mixture until well combined.
  6. Serve warm with extra Parmesan if desired.
