- 8 oz pasta (linguine or spaghetti)
- 1 lb shrimp, peeled and deveined
- 2 cups fresh basil leaves
- 3 cloves garlic
- 1/4 cup olive oil
- 1/4 cup grated Parmesan cheese
- 1/4 cup pine nuts
- 1 tbsp lime juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup cherry tomatoes, halved
- 1/4 tsp red pepper flakes (optional)
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a food processor, blend basil, garlic, olive oil, Parmesan, pine nuts, lime juice, salt, and pepper until smooth to make the pesto.
- In a skillet, sauté shrimp over medium heat for 2-3 minutes per side until pink.
- Add cherry tomatoes and red pepper flakes (if using) to the shrimp, cook for 1 minute.
- Toss the cooked pasta with the pesto sauce and shrimp mixture until well combined.
- Serve warm with extra Parmesan if desired.
Notes
- Use gluten-free pasta if needed.
- Substitute pine nuts with walnuts or almonds.
- Add extra lime juice for a tangier flavor.
