Description

A flavorful Thai-inspired dish featuring tender chicken cooked in a creamy coconut sauce with fresh basil, served over aromatic spiced rice.


Ingredients

  • 500g chicken breast, sliced
  • 1 can (400ml) coconut milk
  • 1 cup fresh basil leaves
  • 2 cups jasmine rice
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tbsp red curry paste
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tbsp vegetable oil
  • 1/2 tsp salt

Instructions

  1. Cook jasmine rice with turmeric, cumin, and coriander.
  2. Heat oil in a pan and sauté garlic and ginger until fragrant.
  3. Add chicken and cook until browned.
  4. Stir in red curry paste and coconut milk.
  5. Simmer for 10 minutes until chicken is cooked through.
  6. Add fish sauce, lime juice, and basil leaves.
  7. Serve over spiced rice.

Notes

  • Use full-fat coconut milk for a richer sauce.
  • Adjust spice levels by adding more or less curry paste.
  • Garnish with extra basil leaves and lime wedges.
