- 500g chicken breast, sliced
- 1 can (400ml) coconut milk
- 1 cup fresh basil leaves
- 2 cups jasmine rice
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tbsp red curry paste
- 1 tbsp fish sauce
- 1 tbsp lime juice
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tbsp vegetable oil
- 1/2 tsp salt
Instructions
- Cook jasmine rice with turmeric, cumin, and coriander.
- Heat oil in a pan and sauté garlic and ginger until fragrant.
- Add chicken and cook until browned.
- Stir in red curry paste and coconut milk.
- Simmer for 10 minutes until chicken is cooked through.
- Add fish sauce, lime juice, and basil leaves.
- Serve over spiced rice.
Notes
- Use full-fat coconut milk for a richer sauce.
- Adjust spice levels by adding more or less curry paste.
- Garnish with extra basil leaves and lime wedges.
