Ingredients

  • 2 lbs beef chuck roast, cut into chunks
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1 cup red wine
  • 1 can (14 oz) crushed tomatoes
  • 2 cups beef broth
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Brown the beef chunks on all sides, then remove and set aside.
  3. Add onion, garlic, carrot, and celery to the pot. Cook until softened.
  4. Pour in red wine and scrape the bottom to deglaze.
  5. Add crushed tomatoes, beef broth, oregano, thyme, bay leaf, salt, and pepper.
  6. Return the beef to the pot and bring to a simmer.
  7. Cover and cook on low heat for 2-3 hours until beef is tender.
  8. Remove bay leaf before serving.

Notes

  • Use a heavy pot for even heat distribution.
  • Check the liquid level occasionally and add more broth if needed.
  • Serve with mashed potatoes or crusty bread.
