Ingredients

- 2 lbs beef chuck roast, cut into chunks
- 2 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 carrot, chopped
- 1 celery stalk, chopped
- 1 cup red wine
- 1 can (14 oz) crushed tomatoes
- 2 cups beef broth
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Brown the beef chunks on all sides, then remove and set aside.
- Add onion, garlic, carrot, and celery to the pot. Cook until softened.
- Pour in red wine and scrape the bottom to deglaze.
- Add crushed tomatoes, beef broth, oregano, thyme, bay leaf, salt, and pepper.
- Return the beef to the pot and bring to a simmer.
- Cover and cook on low heat for 2-3 hours until beef is tender.
- Remove bay leaf before serving.
Notes
- Use a heavy pot for even heat distribution.
- Check the liquid level occasionally and add more broth if needed.
- Serve with mashed potatoes or crusty bread.
