Ingredients

  • 1 (4-5 lb) boneless lamb leg or shoulder
  • 1 cup fresh or frozen cranberries
  • 1/4 cup honey
  • 2 tbsp Dijon mustard
  • 2 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Rub lamb with salt, pepper, and olive oil.
  3. Place lamb in a roasting pan and roast for 1 hour.
  4. Mix cranberries, honey, mustard, garlic, and rosemary in a bowl.
  5. Spread cranberry mixture over the lamb and roast for another 45 minutes or until internal temperature reaches 145°F (63°C).
  6. Let rest for 10 minutes before slicing.

  • Use a meat thermometer for best results.
  • Adjust sweetness by adding more or less honey.
