- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 3 tablespoons Dijon mustard
- 1 tablespoon whole grain mustard
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
- Reduce the heat to low and stir in the heavy cream, Dijon mustard, whole grain mustard, thyme, and paprika. Mix well until the sauce is smooth.
- Return the chicken to the skillet and coat it in the creamy mustard sauce. Let it simmer for an additional 5 minutes to heat through.
- Serve the chicken topped with the sauce and garnish with fresh parsley.
Notes
- For a lighter version, you can substitute the heavy cream with Greek yogurt.
- This dish pairs wonderfully with steamed vegetables or a side of rice.
