Ingredients

- 2 lbs beef brisket
- 3 large onions, sliced
- 1/2 cup balsamic vinegar
- 2 cups beef broth
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp dried thyme
Instructions
- Heat olive oil in a large pot over medium heat.
- Season the brisket with salt and pepper, then sear on all sides until browned.
- Remove the brisket and sauté onions and garlic until softened.
- Add balsamic vinegar, beef broth, and thyme to the pot.
- Return the brisket to the pot, cover, and simmer on low heat for 3 hours.
- Slice the brisket against the grain and serve with the sauce.
Notes
- For extra tenderness, cook longer on low heat.
- Skim fat from the sauce before serving if needed.
- Serve with mashed potatoes or crusty bread.
