Ingredients

- 1 lb ground beef
- 1 can black beans (15 oz)
- 1 can kidney beans (15 oz)
- 1 can corn (15 oz)
- 1 can diced tomatoes (14.5 oz)
- 1 packet taco seasoning
- 1 cup beef broth
- 1 onion, chopped
- 1 bell pepper, chopped
- Salt and pepper to taste
Instructions
- Brown the ground beef in a large pot over medium heat.
- Add the chopped onion and bell pepper. Cook until softened.
- Stir in the taco seasoning, black beans, kidney beans, corn, diced tomatoes, and beef broth.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with your choice of toppings.
Notes
- Top with cheese, sour cream, or avocado for extra flavor.
- Adjust spice level by adding jalapeños or hot sauce.
- This soup can be made ahead of time and reheats well.
