- 2 pounds sweet potatoes
- 1 cup water
- 1 tablespoon olive oil
- Salt to taste
Instructions
- Wash and peel the sweet potatoes.
- Cut them into even chunks.
- Place the sweet potatoes in the Instant Pot.
- Add water and olive oil.
- Seal the lid and set to manual high pressure for 15 minutes.
- Allow natural release for 10 minutes, then quick release any remaining pressure.
- Remove the lid and season with salt.

- You can adjust cooking time based on the size of the chunks.
- Store leftovers in an airtight container in the fridge.
