Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 can (14 oz) coconut milk
  • 2 tbsp curry powder
  • 1 tbsp olive oil
  • 1 cup vegetable broth
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and ginger. Cook until softened.
  3. Stir in curry powder and cook for 1 minute.
  4. Add sweet potatoes, coconut milk, and vegetable broth.
  5. Bring to a simmer, cover, and cook for 20 minutes or until sweet potatoes are tender.
  6. Season with salt and garnish with cilantro before serving.
