Ingredients

- 2 large sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 can (14 oz) coconut milk
- 2 tbsp curry powder
- 1 tbsp olive oil
- 1 cup vegetable broth
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, and ginger. Cook until softened.
- Stir in curry powder and cook for 1 minute.
- Add sweet potatoes, coconut milk, and vegetable broth.
- Bring to a simmer, cover, and cook for 20 minutes or until sweet potatoes are tender.
- Season with salt and garnish with cilantro before serving.
Notes
- You can add spinach or chickpeas for extra texture.
- Adjust spice levels with more or less curry powder.
