Description
A classic sweet potato casserole topped with gooey marshmallows that is perfect for holiday gatherings.

- 4 cups sweet potatoes, peeled and cubed
- 1/2 cup granulated sugar
- 1/2 cup milk
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 cup mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C).
- Boil sweet potatoes in a large pot for about 15-20 minutes, or until tender. Drain and mash.
- In a large bowl, combine the mashed sweet potatoes, sugar, milk, melted butter, vanilla, cinnamon, and nutmeg. Mix until smooth.
- Transfer the sweet potato mixture into a greased 9×13 inch baking dish.
- Bake in the preheated oven for 25 minutes.
- Remove from the oven and sprinkle the mini marshmallows on top.
- Return to the oven and bake for an additional 10-15 minutes, or until the marshmallows are golden brown.
Notes
- For an extra crunchy topping, you can add crushed pecans or walnuts on top of the marshmallows before baking.
- Make sure to watch the marshmallows closely in the oven, as they can burn quickly.
