Description

A classic sweet potato casserole topped with gooey marshmallows that is perfect for holiday gatherings.


Ingredients

  • 4 cups sweet potatoes, peeled and cubed
  • 1/2 cup granulated sugar
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil sweet potatoes in a large pot for about 15-20 minutes, or until tender. Drain and mash.
  3. In a large bowl, combine the mashed sweet potatoes, sugar, milk, melted butter, vanilla, cinnamon, and nutmeg. Mix until smooth.
  4. Transfer the sweet potato mixture into a greased 9×13 inch baking dish.
  5. Bake in the preheated oven for 25 minutes.
  6. Remove from the oven and sprinkle the mini marshmallows on top.
  7. Return to the oven and bake for an additional 10-15 minutes, or until the marshmallows are golden brown.

Notes

  • For an extra crunchy topping, you can add crushed pecans or walnuts on top of the marshmallows before baking.
  • Make sure to watch the marshmallows closely in the oven, as they can burn quickly.
